VIBEYARD
The gimmick here is not a gimmick. Vibeyard pours its own wine — organic, vegan, spontaneously fermented, made by the owners at their vineyards in Portugal — and pours nothing else, which sounds like a limitation until you realize it means every bottle on the list has somebody’s name attached to it. Nine or ten references, orange and white and red and rosé and pét-nat, priced between fourteen and twenty-four euros, in a small room on Torrent de l’Olla that opens at six and closes at midnight and does not try to be anything grander. The food is Portuguese by way of Barcelona: a bifana that is worth the trip on its own, mushrooms à brás, mussels in escabeche, a gilda, asparagus with romesco, leeks — generous portions, honest prices, cooked with the confidence of people who serve this at home. What makes it work is the coherence. Every part of the operation, from the fermentation to the sandwich, points in the same direction, and in a Gràcia crowded with wine bars assembled from other people’s catalogues, that is a genuine distinction. The producers are behind the bar. You can taste the difference that makes.
